There are two kinds of fabric: Water Repellent Fabric and Stain Resistant Fabric.
Water Repellent Fabric
With water repellent fabric, fluid is repelled from the fabric surface instead of sinking into the upholstery itself.
How?
A layer of coating covers the top of the fabric. Therefore, fabrics like these are able to withstand minor contact with light water only.
As time goes by / if hot drinks are spilled on these fabrics, the coating may fade and thus loses the water repellent properties.

Stain Resistance Fabric
Stain Resistant Fabric allows for the removal of various type of stains, not just water.
The fabric is designed to resist and prevent the stain from penetrating through the fabric, to minimize permanent staining.
It would be hassle free to clean up any spillage on the fabric by gently blotting away the liquid stain with a wet tissue.
As these fabrics are easy to clean, these fabrics will be perfect for families with pets and small children.
